Papa a la Huacaína (Potatoes with Salsa Huancaína)

To honor the potato is to remember:
that nourishment travels,
that wisdom migrates,
that what feeds us often comes from lands and people whose stories we must continue to name.

Ingredients
4
large potatoes - such as Russet, Dunbar, or your local variety
½
cup fresh cheese. Choose a white, saltier cheese that you can break down. Panela cheese, feta or ricotta are good substitutes
2
tbsp ají amarillo (yellow chili paste) - can substitute with a yellow bell pepper
½
cup of whole milk
4
crackers or a slice or older, hardened bread

tbsp olive oil S

salt to taste
4
lettuce leaves - iceberg lettuce or a watery variety that adds crunch
2
hard boiled eggs

Optional - fresh parsley for topping

Preparation

Boil the potatoes until soft, then peel and slice while, in a blender, mix fresh cheese, ají amarillo, milk, crackers, oil, and salt until smooth.

Tip: Place all ingredients in the blender and slowly add the oil to blend. This will help with consistency.

To Serve

Place lettuce on a plate, add potato slices on top, pour the sauce over the potatoes and add boiled eggs on top.

Optional: place a few fresh parsley leaves on top for presentation
