Papa a la Huacaína (Potatoes with Salsa Huancaína)
To honor the potato is to remember:
that nourishment travels,
that wisdom migrates,
that what feeds us often comes from lands and people whose stories we must continue to name.
Preparation
Boil the potatoes until soft, then peel and slice while, in a blender, mix fresh cheese, ají amarillo, milk, crackers, oil, and salt until smooth.
Tip: Place all ingredients in the blender and slowly add the oil to blend. This will help with consistency.
To Serve
Place lettuce on a plate, add potato slices on top, pour the sauce over the potatoes and add boiled eggs on top.
Optional: place a few fresh parsley leaves on top for presentation
