Caramelized Peach & Heirloom Tomato Salad on Whipped Feta

One of Tara Middleton’s favorite ways to meet the summer season is to stroll through the farmer's market, admiring the vibrancy, peak plumpness and deep aroma of fresh stone fruit and heirloom tomatoes that take over each stand.

Base

Block of your favorite organic feta cheese

Cup of full fat cottage cheese

Clove of garlic 
¼
Cup of olive oil

Tablespoons of honey (+ more if needed, but start with less)
Topping

Yellow peaches, diced into large cubes
2
Medium sized heirloom tomatoes, diced into cubes

Dash of olive oil

Pinch of sea salt
Dressing

Any reserved peach juice (from cooking)

Tbsp of honey, or hot honey (to make your own, add honey and crushed red pepper flakes (or jalapeño slices) to a saucepan. Heat over medium heat until the honey very lightly begins to simmer. Give the mixture a quick stir to combine, then remove pan from the heat and let cool.Store in a glass jar)

Preparation

For the base:

Blend all ingredients in a food processor or blender until smooth, season to taste and set aside.

For the topping

Lightly grill the peaches in a pan over medium-high heat until golden brown on each side and slightly soft (reserve any peach liquid from the pan and set aside for simple dressing). Let cool and combine caramelized peaches with the other topping ingredients.

Mix any reserved peach juice with honey and drizzle on top.
